2016 Chardonnay Reserve

The 2016 Chardonnay Reserve is entirely from the Canada Family Vineyard in Plains, TX, where the age of the vines span 4 years to 35 years old. Taking an Old World approach to this fruit maintains the more classic style for this wine. In addition to fermenting in all French Allier barrels, 40% of which were new, using yeast clones specially isolated from top Burgundy producers allows for such a large aroma profile and decadent full mouth feel. Six months of sur lie, or "on lees" aging, further develops the silky, full mouth feel and round finish, enhancing the natural flavors of the Chardonnay grape.

2017 Cabernet Sauvignon Reserve: Wilmeth Family Vineyard

This single vineyard Cabernet Sauvignon, grown by Jet and Gay Wilmeth of Diamante Doble Vineyard in Tokio, TX, is a fine example of West Texas terrior. Hot days and cool nights provide the ripeness and balanced tannic structure, while the dry, earthiness is redolent of the West Texas red soil. 

 
2017 Cabernet Franc Reserve

2017 was an exceptional vintage year. The 2017 Cabernet Franc Reserve is a great example of this. Reminiscent of the Old World Loire Valley with fruit, body and structure underpinned by lavish tannins, layers of developed fruit, including the beloved green notes epitomizing Cabernet Franc, come forward with deep violet and cassis nose. Following are notes of mild pepper, wood violet and red fruit (think red berries) around the edges.  What unfolds from there is an intriguing sublime note of rich tobacco, oak and dark bittersweet chocolate on the finish. 

Our barrel program included 40% new oak – of which 70% was French Oak and 30% American Oak.  Aged for 18 months on lees, allowing for full body and mouth feel development.
