Library Wine - One of our best single vineyard lots, the Canada Family Vineyards produces some of the most concentrated Cabernet Sauvignon in Texas. The 2012 harvest was a near perfect year across the State of Texas - and that fact is personified int he quality of the fruit from the Canada Family Vineyard. When the fruit arrived at the winery, we pursued a gentle crush - only crushing about 30% of the berries - in order to favor a hybrid carbonic/traditional maceration. We cold soaked the fruit for 14 days prior to starting fermentation. All told the wine was on skins for 28 days prior to pressing. 

The wine was then barrel aged in 30% new French and American White Oak.
