The Canada Family Vineyard sits just outside of Plains, TX 6 miles from the New Mexico border. This area is a large limestone shelf that gives the wine its characteristic mineral notes and subtle herbal notes. We harvest this vineyard all in one night, making it unique in respect to the uniformity of the fruit.

When the 2014 fruit arrived at the winery, we pursued a gentle destemming with no crushing of the berries. We soaked the fruit for 10 days prior to fermentation. All told the wine was on skins for 28 days prior to pressing. The free run juice is then separated, allowing the grapes to drain in tank for 24 hours before pressing. The skins act as a natural "filter", clarifying the free run juice, and giving the wine a head start on tannin resolution. The press fraction, that portion of the wine retrieved from mechanical separation, is then aged in barrels as its own lot, effectively keeping the free run and press run as two lots. We then slowly blend back the two lots over the course of 14 months to allow an even integration of the tannins and phenolic properties. Hold the wine 3 - 10 years.

Aromatics: Raspberry blossom, dark coffee, spice and leather

On the palate:  Red fruit, mineral and brown spice with well integrated tannins finishing with a lingering coffee and earthy note. Lots of subtle herbal and spice notes.

Pairing: Classic rich beef, wild mushroom sauté or soup, well-aged brine cheeses, chocolate and cream based desserts.
