Chevaux Noir 2014
The inspiration for this blend came from the classic Cheval Blanc, a blend of Merlot and Cabernet Franc.
The Merlot for this came from another great friend and grower, Jet Wilmeth. The Merlot is a layered joy of fruit, tannin, dark spice and well developed notes of candied cherries.
The Cabernet Franc was sourced from our very good friends and growers, the Bingham Family Vineyards. This rich fruit, with a great underpinning of well developed tannins is very reminiscent of the old world Loire Valley.
Together, the two varietals make a wine that showcases the High Plains fruit. What unfolds is an intriguing, sublime note of rich tobacco, oak, and dark bittersweet chocolate.
This wine is a very limited release and will age wonderfully at least 5 more years.
Aromatics: Cassis, tobacco and hints of lavender and herb
On the palate: Dark notes of coffee, currant and sweet cherry. Finish of dried fruit and brown spice. Dry, well integrated tannins
