Clementine Late Harvest Viognier 2015 (Madeira-style)
It's not every year we Mother Nature gives us just the right environment to allow Viognier grapes to hang on the vine, reaching 34.3 Brix. But the growers at Farmhouse Vineyards were gracious enough to allow us our whims during the 2015 growing season, letting the grapes hang until the sugars concentrated nearly six weeks later than our "normal" Viognier harvest. The next step is a long, slow fermentation, stopping at 5% residual sugar and 16% alcohol to which we fortified up to 19.5%. Then the aging in neutral barrels in the hot Texas summer sun. The result is this deep, intense, tropical, nutty madeira-styled wine we are proud to call Clementine, after Mrs. Bunny Becker.
