Spice and pepper followed by red plum, strawberries and anise…this wine provides a wonderful floral and spice aromatic that will not stop. Following with a bright finish of currant, subtle hints of cherry and anise. There you have a Texas Counoise.
Counoise, pronounced Koon-wah, is a light bodied red wine varietal that has traditionally been used to blend with Grenache, Syrah and Mourvedre and is one of the sanctioned variatels used in Chateauneuf du Pape.
Careful, gentle processing of this grape during the warm fermentation allows florals and fruit characters to present. Aging in neutral oak barrels promotes the warmth, accenting the inherent fruit, yielding strawberries, light plums, mild licorice with a soft, tannin structure.
Aromatics: Dried rose petals, cherry, notes of black tea and mild dried herbs
On the Palate: Dried cherries, strawberries, red plums, anise and brown baking spices - creating a soft creamy mouthfeel with medium acidity and light tannins
