Chevaux Noir 2015
Our second release of Merlot and Cabernet Franc blend, inspired by the Cheval Blanc, hails from the West Texas High Plains. The Amanecer Vineyards of Sundown, TX provided the Merlot which beautifully compliments the Bingham Family Vineyards Cabernet Franc.
Always some of the last grapes to arrive on our crush pad, both the Merlot and Cabernet Franc are fermented, using yeast chosen to highlight the best attributes, in new French and American oak barrels. Each component ages for a minimum of one year before we begin to blend. After the perfect blend is selected, the wine is returned to barrel, allowing all components to fully meld together, for an additional 6 months before bottling.
A full-bodied, bold wine, the 2015 Chevaux Noir is warm and soft. The barrel component tames the Cab Franc while expressing the best of the Merlot. Smooth and warm, this wine elicits warm fires at home with loved ones.

Aromatics: smoky, earthiness, mild gamey notes, dried herbs, currant, and chocolate
On the palate: ripe black plum, sage, petrichor, black pepper, roasted green peppers, medium acidity, soft tannins
Pairing: Beef Bourguignon, wild game, lamb, roasted winter vegetables, brine-aged hard cheeses
